Keeping Up With...Food (Menu Plan 10/5 - 10/12)

We had some things that had to be switched around last week due to a stomach bug hitting the house at the end of the week.  While I HATE sickness, this one wasn't that bad and it was kind of nice to be forced to slow down for a few days.  We spent Thursday through Sunday pretty much relaxing, watching TV and playing.  No a bad way to spend a long weekend, although I could have done without the stomach issues.  Maybe next time!

Friday I had it pretty bad and did not feel like cooking, so we treated the boys to their favorite takeout:


I also took the extra time at home to organize and empty my bread fridge.  No one eats the heels of bread so I make them into bread crumbs.  We also had some stale hot dog rolls that I got for free.  Now we are stocked up on bread crumbs for a while!

OK, on to this week's plan.  I bumped one meal from last week to this week and then had to completely change my plan again when my mother in law dropped off some extra produce she got last week.  I have a ton of peppers and two heads of cabbage to use up so I went searching for some recipes to use those.  I decided not to do a freezer meal this week since I have so much produce to use right now, although we are super busy (as always) so I may change my mind and use something.  I'm also going to keep a close eye on the produce and if something looks like it will go bad, I'll change the order for these meals.

Sunday, 10/5 - Stuffed Pepper Casserole - I will double this and freeze the second one
Monday, 10/6 - Nutty Stuffed Cabbage (Relish recipe)
Tuesday, 10/7 - Thai Chicken Tacos for adults, regular tacos for boys - we love Taco Tuesday!
Wednesday, 10/8 - Mexican Stuffed Peppers (Relish recipe)
Thursday, 10/9 - Cabbage Rolls (Relish recipe)
Friday, 10/10 - Caribbean Chili (Relish recipe)
Saturday, 10/11 - Cheesy Butternut Squash Pasta
Sunday, 10/12 - Fettuccine Alfredo - bumped from this weekend.  Still trying to use up spaghetti squash
