Keeping Up With...Food (Menu Plan 10/13 - 10/19)

Wow, I did a pretty good job sticking to my menu plan last week.  We made a huge dent in the veggies we had in the fridge, but still have a ton of cabbage left over.  One head goes a long way...and we had 2 to use!  I will be finishing it up this week with coleslaw one day and a big pot of cabbage soup another day.

The theme for my menu this week is simple and easy.  We have a weird week with Adrian off tomorrow but me volunteering in the boys' school all day, then field trips on Weds and Thurs for the AJ and Daniel and finally Daniel has off Friday.  Add on a jam packed weekend and we need simple, easy and lots of crock pot options!!

I'm lucky enough to be going out to dinner with friends tonight so the guys are having leftovers and I am bumping tonight's meal to tomorrow.  I may do another night of leftovers this week as well since we have a ton of stuff right now.  I'm really trying to keep our grocery bill low this week and use what we have.

So here's the plan for the week:
Monday, 10/13 - Fettuccine Alfredo - bumped from today with this Apple Pecan Salad
Tuesday, 10/14 - Taco Tuesday!
Wednesday, 10/15 - Cabbage Beef Soup - I'm going on AJ's field trip so I needed a crock pot meal
Thursday, 10/16 - Spinach & Mushroom Rigatoni - I bought an extra bag of spinach so hoping this uses that up
Friday, 10/17 - Leftovers or a Freezer Meal - spending the day at COSI with friends
Saturday, 10/18 Lunch - Crustless Pizza
Saturday, 10/18 Dinner - Pork Meatloaf with Coleslaw
Sunday, 10/19 - Pumpkin Chili - after spending the day at the zoo for Boo at the Zoo

I'm also hoping to make the Cinnamon Crunch Breakfast Bites at some point next weekend.  Maybe Sunday before the zoo?

  1. Sounds like a busy, fun week! I have cabbage my dad gave me from their garden that I need to decide how to use... the soup sounds really good!
