Keeping Up With...Food (Menu 4/28 - 5/4)

Wow, we are busy.  There is so much going on right now my head is spinning.  April flew by and I feel like May is going to do the same.  The boys are gearing up for their last month of school and we also have a few fun things planned for the month of May.  My meal plans will probably be more quick and easy meals than they have been.

Last week went pretty much as I planned for my menu, with the exception of Sunday.  We were exhausted and had a ton of stuff that needed to be done today so we decided to make the ham & bean soup to use for leftovers this week and then fend for yourself for dinner.  I'm eyeing some frozen apps.  Not exactly diet friendly, but buffalo chicken strips sound super good right now.

I'm also trying to use up all the hard boiled eggs that we colored for Easter.  Whose idea was it to color 2 dozen?  That would be me.  Only Zak and I eat them so it's pretty slow going.  I did enjoy a delicious egg salad sandwich this week and another one today.  I have about a dozen left.  Lots of salad this week to use them up!

Monday, 4/28 - Pork & Green Beans (Relish recipe) - hold over from last week
Tuesday, 4/29 - Ham & Potato Casserole (Relish recipe)
Wednesday, 4/30 - Ravioli Bake (Relish recipe)
Thursday, 5/1 - BBQ Chicken Melts
Friday, 5/2 - Chicken & Gnocchi (Relish recipe)
Saturday, 5/3 - Kale & Mushroom Calzones
Sunday, 5/4 - Buffalo Pork Chops

  1. This is such a crazy time of year, isn't it? Our weekends have been insane- but in a good way. :)

    1. Yeah, our schedule is the same. We have nothing this weekend, then we go straight thru mid-June (at least). But we love it!! And there is a vacation to NJ in there so I'm excited!!

  2. I never heard of the Relish website...those look like some great recipes that I'll have to check out! Your egg salad sandwich looks tasty, I need to get much more creative with eggs!

    1. It is a meal planning site that I pay $5/month for, but it is well worth it. They have a great variety, tons of healthy food & the veggies are what's in season. I'm a big fan!
