Menu Plan Monday (1/6 - 1/12)

Last week our menu was pretty tasty, and I pretty much made everything that was on my menu.  I forgot to buy an extra bag of hashbrowns, so I didn't get a chance to make the BBQ Chicken Hashbrown Casserole, but luckily I was able to bump up a meal planned for early this week (Chicken Tostados from Relish) and we still had a yummy, healthy meal.
Sunday's lunch - Quinoa, Asparagus, Beans & Roasted Red Peppers - Yum!
One of my goals for the next few weeks is to empty my deep freeze in the basement.  We have been having problems with it and it's really iced over right now.  We need to defrost it and see if this happens again, we may be in the market for a new one.  So in addition to healthy eating, I'm also trying to use up everything in that freezer, including some freezer meals.  My goal is to have one freezer meal on the menu each week until they are gone.

Here's what we're eating this week:
1/6 - Pork Chops with Creamy Dill Sauce (Relish)
1/7 - Slow Cooker Meatloaf with Mushrooms (Relish)
1/8 - Meatball Canellini Soup (Relish)
1/9 - Freezer Meal
1/10 - Parmesan Spaghetti Squash with Italian Sausage
1/11 Lunch - Kale and Bean Soup
1/11 Dinner - Eggplant Parmesan (Relish)
1/12 Lunch - Sausage Quiche
1/12 Dinner - Pork Chops with Spicy Roasted Red Pepper Sauce (Relish)

You will notice I cook a lot with spaghetti squash.  I love this vegetable, so filling and versatile.  If you have never cooked with one before, you should give it a try.  My tip for using them...cook it first before you try to cut it.  The first time I tried to cut it & then roast it and I nearly lost a finger or two.  Ever since then I roast it first for 45-60 minutes depending on the size, then cut into it.  Much easier!!

    1. Mine too! I can't believe I didn't discover it until last year. I use 1 or 2 each week now.

  2. Thanks so much for linking up!! We have a deep freezer in the basement too but we haven't plugged it in since we moved this summer. I'm excited to start filling it but I think it will have to wait until the spring when we (hopefully) get a garden surplus!
