1/9 - Freezer Meal
1/10 - Parmesan Spaghetti Squash with Italian Sausage
1/11 Lunch - Kale and Bean Soup
1/11 Dinner - Eggplant Parmesan (Relish)
1/12 Lunch - Sausage Quiche
1/12 Dinner - Pork Chops with Spicy Roasted Red Pepper Sauce (Relish)
You will notice I cook a lot with spaghetti squash. I love this vegetable, so filling and versatile. If you have never cooked with one before, you should give it a try. My tip for using them...cook it first before you try to cut it. The first time I tried to cut it & then roast it and I nearly lost a finger
