Keeping Up With...2021 Goals (Weekly Recap 2/15 - 2/21)

Last week was another weird one and it went by in a flash! We started with a holiday on Monday and everyone had the day off from work and school which was great. We spent the day doing stuff around the house and getting caught up on a few things after spending the whole weekend hanging out and relaxing. The rest of the week was a lot of snow, ice and schedule changes for all of us. The school district was all virtual on Tuesday and Thursday which isn't a huge deal for my boys, but it does change their schedule a little bit. I worked at the church preschool on Wednesday which meant none of our friends came over that day. And then due to sickness and schedule changes, none of the other kids came over Thursday or Friday either. That made it a quiet week here and we got our schoolwork done quicker, however the boys really missed having friends to play with!
The weekend was also weird for us. Friday night the boys were finally able to get together with their friends to play Dungeons and Dragons. They had a great time playing and are nearly done their current quest! They also enjoyed homemade brownies from one of the other moms. Then on Saturday after Zak went to bowling, we did our work for the weekend. We had plans to have a fun day on Sunday so we wanted to get our work done early. However we decided not to go out on Sunday and honestly felt off the whole weekend. We decided that from now on, we will only have "fun" days on Saturdays and work on Sundays, it just works better for our family. 

Here's how I did on my goals this week.

Working on Myself:

  • Lose 50 pounds by exercising 5 days each week and walking at least 400 miles this year - I did weigh in this week, and was happy to see that over the past 2 weeks of not really focusing on this, I only gained 2.5 pounds. While I wish I was going in the other directions, I'm glad that gain wasn't bigger. I am having a hard time refocusing on this goal, but I will do it! I only walked about 5 miles this week for a total of 55 miles so far this year. It was just so cold and icy this week, it was really hard to get out and get moving. I will refocus on this soon too!!
  • Read 15 books for fun - I didn't finish any books this week, but I read about 50% more of "Christmas Shopaholic" and only have about 20% left in the book. It's due back on Wednesday so I will finish it this week for sure!
  • Write Scripture(s) every day this year - I have done this all 52 days so far this year. I'm really enjoying this practice so far this year.
  • Attend 12 Zumba jam sessions to improve my teaching skills - I attended 1 jam in January and am registered for one in March. I decided not to do a February one since I'm not teaching right now. Hopefully I can make it up later this year.
Working on Family:
  • Play all 152 of our board games together (either just Adrian and I or as a family) - We played 3 games this week for a total of 32 games so far this year. Adrian and I played Combo Fighter, City of the Big Shoulders and Coldwater Crown. We also played Fields of Arle this weekend that we borrowed from CABS. We weren't big fans of this game so we are returning it this weekend to get a new game to try. You can follow along on my thoughts on each game on this webpage
  • Do 10 home improvement/reorganization projects - We finished up the play room this week and the boys did a great job of getting rid of a lot of things. We still need to finish up the game closet and figure out the decor in there, which we hope to do this weekend. We are still not done with the garage, it's just been too cold and snowy to deal with it! Again, we are hoping to finish it this weekend.
  • Pay off all of our outstanding credit card debit and don't incur any additional debt - We paid off our new couches this month, and are down to only one credit card left to pay off. We incurred some new debt this month since AJ got his braces, but we hope to pay it off quicker than the 2 year payment plan we will be on.
  • Watch 50 movies together and continue watching TV series together - This week we watched "Big Trouble in Little China" and have watched 6 movies so far this year. The boys really enjoyed this movie and are hoping for a sequel, ha! I could not get in to it, but I was very distracted that night so it may not have been the movie's fault. We also watched a bunch of "WandaVision" and we're nearly caught up on this series. It started weird, but we are loving it now!!
  • Celebrate a holiday every day this year - This past week we celebrated Presidents Day, Fat Tuesday, Cabbage Day, Drink Wine Day, Tug of War Day, Love Your Pet Day and Sticky Bun Day. Keeping Up With...Food (Meal Plan 2/21 - 2/27)

I have been behind on these posts, but this week I'm actually early! I've had a lot of free time this past week between the snow cancelling a few things, Adrian working some overtime and having Monday as a holiday so everyone was off. We got back to eating healthy which means more cooking and washing dishes for me, but that's OK. We did great sticking to last week's meal plan and all of the food was delicious! The IP Baked Ziti was by far the favorite meal of the week and will be in heavy rotation over here. My only complaint is that everyone liked it so there are no leftovers! Here are a few pictures of the delicious and healthy food we ate this week.

This week is very busy for us with something just about every night during the week. We also have to finish Zak's Pinewood Derby car for his race this Saturday. We have a few medical things this week including AJ getting his braces on (finally!) and my last round of testing to figure out a plan to keep my iron up (finally!) I've tried to pick easy and quick meals this week that are also filling since there's a lot of running around. You will notice a lot of one pot meals, as well as a ton in our instant pot, air fryer and slow cooker. I hope to be able to make everything this week, but know I have enough in the pantry and freezers to figure something out if I'm not able to cook one day.

Sunday - Ribs in our instant pot & Pierogies (after our monthly wine tasting - yay!)
Monday - Instant Pot Beef and Broccoli over Rice with Margaritas!
Tuesday - Kielbasa & Cabbage recipe from my dad for the adults, Tacos for the kids
Wednesday - Squash & Chicken Stew with Tortilla Chips
Thursday - Slow Cooker Chili
Friday - Spinach & Asiago Burgers and French Fries in the Air Fryer
Saturday - Steaks on the Grill with Air Fried Butternut Squash

Water Flavor - Orange again. I'm doing a grocery pick up order early this week to get a few things to get us thru the next few weeks and I'll be adding mint to my list to spruce up my water for next week.

Baking - I'm back to baking a lot this week! We have a few holidays this week that require some baking on my part so I'm excited for those. Plus I'm going to start making either muffins or bread again for Adrian and I for breakfasts since we're just about caught up on granola bars and all of the baked goods from the parties. This week I'm making Cinnamon Rolls for breakfast on Sunday, Banana Bread for breakfast on Tuesday and Cranberry Applesauce Muffins for the adults for the week.

Keeping Up With...Family (February Birthdays)

Every year we spend the first week or so in February celebrating. We have Zak's birthday on the 8th, Daniel's on the 10th and then my niece's on the 15th. So between those 3 birthdays, Valentine's Day and often Superbowl Sunday in one week, we just celebrate all week around here! This year things were even more spread out as we tried to keep parties small so everyone stayed safe and healthy. Here's how we celebrated our favorite week of the year this year!

Saturday - We gave Zak an early birthday present, his own bowling shoes, and then I joined him and Adrian for bowling this morning. He didn't bowl great, but he loves his new shoes! Then we came home and got a few things together and headed out to my brother's house for our first party. We celebrate all 3 February birthdays with tons of play time for the kids, a delicious dinner, a 3 layer cake and of course presents! We enjoyed our evening there, it was a very fun way to kick off our week!
Sunday - We got up and got our work done quickly so we could continue the celebration. Daniel had a friend come over to hang for the afternoon. They had a fun time play video games and catching up in person instead of just over texts. She brought him a great handmade present and we all had cupcakes together. After she left, the boys had some free time while Adrian and I watched the Super Bowl and enjoyed some appetizers. We all watched the halftime show together, none of us were impressed, ha! Then we had an early bedtime since there is a busy week on tap.

Monday - It's Zak's actual birthday today!! Unfortunately we had a regular school day today, but we still made the best of it. Adrian went out to get fresh Krispy Kreme donuts for us for breakfast. His class sang to him on Zoom and everyone finished their work quickly so they had some extra video game time this afternoon. When Adrian finished with work for the day, Zak opened his presents and then we got packed up and headed to Urban Air for his birthday party with friends. We had a great group of kids and had so much fun on the trampolines, Wipeout course, ninja course and high ropes course. We also enjoyed pizza and cookies and most of us got coupons to go back another day. Zak got a lot of great presents from his friends, he was very excited about all of them. It was a late night for us, but we all had a blast so that's all that matters!!
Tuesday - We woke up to snow and were hoping for a 2 hour delay for a little more sleep but that didn't happen. So we got up and got to work on our schoolwork for the day. This day is usually the calm between the storms to catch our breath and this year was no exception. We finished up our schoolwork and the boys got some more extra video game time. We enjoyed Jets pizza for dinner and had cookie pizza for dessert to celebrate both Zak's birthday and National Pizza Day. We finished the night with family movie night watching "X-Men: The Last Stand."
Wednesday - It's Daniel's actual birthday today!! Once again, it was a school day but thankfully it's a work at your own pace day and we have 3 of our friends over today. His buddy Patrick brought over (more) breakfast donuts for us to enjoy together. Then everyone worked really hard and very quickly so they could finish everything before lunchtime. Zak had a virtual Valentine's Day party with his class which was fun for him since he's missed out on all of his class parties this year. When everyone was done with school, they headed upstairs to play together for the rest of the day.

I made Daniel's choice for dinner, cavatelli and cheesy bread. After dinner, I headed to work for about an hour while Adrian cleaned up from dinner. Then we opened Daniel's birthday presents and he was very excited about all of his new art supplies. After presents, we had homemade Oreo ice cream cake and watched his choice of a new show 'The Hollow" before heading to bed since we still have one more day of school left this week.
Thursday and Friday - We got an awesome surprise on Thursday when I woke up to a phone call from the school saying that we were getting an actual snow day today! We used almost all of our calamity days to start school late this summer so I thought we weren't getting any snow days this year. We were all super excited to get the day off!! The boys spent all day Thursday and Friday playing video games, watching YouTube and finishing our puzzle. Thursday night I cooked tacos for Zak's choice for his birthday and twe had leftover cake and cookies for dessert both nights. We checked out another new to us show, "WandaVision" and we all love it! And we had another family movie night on Friday watching the live action "Mulan." It was nice to have a few days to catch our breath and catch up on a few things around the house that we hadn't been keeping up with.

Saturday - We finished our birthday celebrations today with Daniel's birthday party with friends. He had 5 friends come over for pizza, cake and video games this afternoon. Two of them went home late at night and the other 3 spent the night here with us. They enjoyed snacks and video games until the wee hours of the morning, very little sleep happened at the sleepover. They all had a great time, especially since some of them haven't been together in person in almost a year! We finished up the party on Sunday morning with bacon and chocolate chip pancakes before everyone headed home. The 5 of us spent the whole day Sunday relaxing and recovering from the lack of sleep the night before. It was a great week of celebrating 2 of my favorite people!!

Keeping Up With...Food (Meal Plan 2/14 - 2/20)

Well we did an amazing job sticking to our meal plan last week, although it may have been the most simple plan I have ever created, ha! We have had more cake and pizza in the last week than we've had in the entire past year. While I love this week and celebrating my boys, I also always look forward to getting back on track with my healthy eating. Our original plan was to get back on track on Monday, but then we saw how much leftover pizza and cake we had so we decided to take one more day to try to eat some more of that stuff before getting back on track on Tuesday. Plus we were planning on grilling steak and we're supposed to get slammed with winter weather from Sunday-Tuesday and then again Thursday and Friday so we'll be pushing off the steak for a week or so. I didn't take many pictures of our food this week, but here is one from Saturday's lunch celebrating National Tortellini Day!

This week is super busy for us with doctor appointments, lots of work for me and Dungeons and Dragons on Friday night. I have a plan for the week, but as always will be flexible if we need to switch things up. I am still stocked up on sandwich stuff and can always throw together pasta for a quick dinner. I am not shopping again this week, we will only be using the food that we have. My new goal is to make it until my birthday and Easter without shopping, but we'll see if we can do that. Our freezers are bursting so I know I have enough meat to make it, just not sure about veggies and other sides. Plus the kids will probably run out of snacks before then, but I'm hoping to get creative with some of the snacks from the school before running back to the school.

Monday - Leftover pizza for all!!
Tuesday - Tacos for the kids and Mexican Cauliflower Rice Skillet for the adults 
Wednesday - Kielbasa, Cabbage & Potato Skillet for all to celebrate Cabbage Day
Thursday - Instant Pot Baked Ziti and salad
Friday - Leftovers since I'm working and the boys have D&D
Saturday - Chicken & Broccoli Stew

Water Flavor - Just plain orange again this week. Whenever I get back to the store, I will pick up more mint!! I'm starting to make a dent in the backlog of oranges, yay!

Baking - Once again, I'm not doing a ton of baking this week. We still have cookies and cake leftover from last week that we will be working on this week. I did buy packzi donuts for breakfast on Tuesday to celebrate Fat Tuesday/Mardi Gras. After this week, I will go back to baking at least one thing each week for us to have for breakfasts.

Keeping Up With...2021 Goals (Weekly Recap 2/8 - 2/14)

This week went by in a blur of activity! Zak turned 9 on Monday and we had his party that night. Daniel turned 12 on Wednesday and we had his party on Saturday. We got our first official snow day on Thursday which gave us a 5 day weekend. We celebrated Valentine's Day with a virtual party for Zak on Wednesday and then as a family on Sunday. Plus our normal activities and having our friends over. It was a jam packed week and I'm surprised I'm still standing at the end of it, ha! The house also took a beating but thankfully we all have Monday off to pull it back together.

I will be doing a separate post about the two boys birthday activities sometime this week and will try to remember to link it back here. For Valentine's Day we celebrated by doing a whole lot of nothing on Sunday. The boys were all exhausted after Daniel's sleepover Saturday night so they mostly watched YouTube and played video games. We did play a board game with each of them and then Adrian and I played two more alone. He and I ordered fajitas and margaritas from the Mexican place around the corner for dinner so we didn't have to worry about cooking. We didn't do gifts, we never do. We prefer to spend time together and spend the money on a nice meal out (or take out this year) then gifts that we don't really need. Zak celebrated Valentine's Day early with his class on his Wednesday Zoom. They played a few minute to win it games, listened to a story and had snack together. Then we made heart structures on our own with our friends who are here on Wednesdays. Rocky also got to celebrate with a themed photo shoot at daycare on Thursday!

Here's how I did on my goals this week.

 Working on Myself:

  • Lose 50 pounds by exercising 5 days each week and walking at least 400 miles this year - I didn't weigh in this week, but I'm pretty sure I didn't lose anything and probably gained. I'll be back to focusing on healthy eating on Tuesday, once all of this pizza and cake are out of my house! I walked about 8 miles this week for a total of 50 miles so far this year. That is slightly more than my plan of 1 mile per day, which is great to be able to keep going during a cold and busy week like the one we just had!
  • Read 15 books for fun - I didn't finish any books this week, but I read about 30% of "Christmas Shopaholic."
  • Write Scripture(s) every day this year - I have done this all 45 days so far this year. I'm really enjoying this practice so far this year.
  • Attend 12 Zumba jam sessions to improve my teaching skills - I attended 1 jam in January and am registered for one in March. I decided not to do a February one since I'm not teaching right now. Hopefully I can make it up later this year.
Working on Family:
  • Play all 152 of our board games together (either just Adrian and I or as a family) - We played 6 games this week for a total of 29 games so far this year. We played Coup as a family, Chronicles of Crime with AJ, Coconuts with Daniel and Zak. Then Adrian and I played Castles of Burgundy, Concordia and Curious Cargo. We also played a few of our favorites this weekend since we had so much time, Everdell and Roll for the Galaxy. You can follow along on my thoughts on each game on this webpage
  • Do 10 home improvement/reorganization projects - We made a huge dent in the playroom clean out this weekend and got almost the whole room organized. We have one more section left, and the closet. We will be working extra this week to finish up the play room since we don't have many extra kids this week. We are still not done with the garage, it's just too cold and snowy to deal with it!
  • Pay off all of our outstanding credit card debit and don't incur any additional debt - We paid off our Best Buy credit card last month which included the boys' new XBox and their laptops from this summer. This month we paid off our new couches, and are down to only one credit card left to pay off. We will be incurring some new debt this month since AJ is getting braces, but we hope to pay it off quicker than the 2 year payment plan we will be on.
  • Watch 50 movies together and continue watching TV series together - This week we watched "X-Men: The Last Stand" and "Mulan" and have watched 5 movies so far this year. We enjoyed both movies, especially the live action Mulan. The boys didn't really want to watch it, but all really enjoyed it. We also started two new TV series this week "The Hollow" and "WandaVision." Both are weird, but we're really sucked in to WandaVision already. I think we'll finish that one pretty quickly.
  • Celebrate a holiday every day this year - This past week we celebrated Scouts BSA's Birthday, National Pizza Pie Day, National Umbrella Day, National Peppermint Patty Day, Abraham Lincoln's Birthday, National Tortellini Day and Valentine's Day. Keeping Up With...2021 Goals (Weekly Recap 2/1 - 2/7)

Last week was crazy busy with lots of schedule changes too. We had a lot of snow and ice so the boys had 2 days that would have been snow days but were full virtual days instead and one two hour delay. It seemed like they had less school work so that was good, although since there was more independent work, there was a lot of procrastination as well. Thankfully we finished everything and got it turned in. I also had another doctor's appointment which lead to more tests in a few weeks and possibly surgery soon. The boys and I had dentist appointments on Tuesday and no one had any cavities - yay! AJ does need two teeth pulled and will then have braces put on later this month. Finally Adrian and the boys went for much needed haircuts on Friday and came back looking fantastic!
This Saturday kicked off our birthday celebration week since both Zak (Feb 8) and Daniel (Feb 10) have birthdays next week. I will do a separate blog post about their birthday celebrations next week when we are all done. We are doing multiple small parties this year to keep things safe and make sure everyone stays healthy. We also had the Super Bowl on Sunday so it was a weekend with lots of sugar and junk food. I thought the game was pretty boring and while I appreciate that Tom Brady is an amazing player, I'm sick of watching him win, ha! I didn't really like the halftime show, although I think The Weeknd did a great job with what he had to work with. I don't really know his music so that didn't draw me in either. Finally the commercials were mostly OK, and I missed some of the bigger names. My favorites where the one for Alexa and the one for Paramount with Beavis and Butthead. I also enjoyed our food selection which included fried pickles, chicken wings, Mexican dip and ice cream.

 Here's how I did on my goals this week.

 Working on Myself:

  • Lose 50 pounds by exercising 5 days each week and walking at least 400 miles this year - I didn't lose anything again this week, I gained about .5 pounds. The stress of the week got to me so there was more junk food than there should have been. I only walked about 6 miles this week for a total of 42 miles so far this year. I was really busy and really tired most nights so I didn't walk as much as I would have liked. Plus it was SO cold outside!
  • Read 15 books for fun - I finished two books last week, although one of them was really more like a short story. I finished the 11th book in the How to Train Your Dragon series and it was great, I can't wait to read the final book! I also read "Giraffe and Flamingo" which was a short story that I got free from Amazon. It was just OK but was a nice light read. I started my next book last week as well, "Christmas Shopaholic."
  • Write Scripture(s) every day this year - I have done this all 38 days so far this year. I'm really enjoying this practice so far this year.
  • Attend 12 Zumba jam sessions to improve my teaching skills - I attended 1 jam in January and am registered for one in March. I'm waiting on a February jam to see how I'm feeling after the very busy first half of this month.
Working on Family:
  • Play all 152 of our board games together (either just Adrian and I or as a family) - We only played 1 game this week for a total of 20 games so far this year. We played Champions of Midgard on Saturday. We were really busy with all of the other stuff we were doing this weekend so we didn't have time for other games. We'll be back to more games next weekend, it's a 3 day weekend! You can follow along on my thoughts on each game on this webpage
  • Do 10 home improvement/reorganization projects - We didn't work on either of the two current projects we're working on this weekend because we were so busy with other fun things. We will be making the time over the next 3 weekends to finish both the garage and the play room clean outs.

Everyone thought the movie was hilarious, although Adrian & I feel it went on a little too long. We also finished season 1 of "Raising Dion" and it was fantastic! Great show with lots of fun twists. Can't wait for season 2!
  • Celebrate a holiday every day this year - This past week we celebrated National Get Up & Move Day (snow shoveling for the win!), Groundhog Day, American Painters Day, Homemade Soup Day, Nutella Day, Ice Cream for Breakfast Day and Superbowl Sunday. Keeping Up With...Food (Meal Plan 2/7 - 2/13)

We had another pretty great food week last week and mostly followed our plan. I did all of the grocery shopping for the next month last week and realized that I bought smoked salmon that I could not freeze and would not last as long as when I had planned to make the meal with it. So I bumped the planned meal for last Friday and made this Salmon Ricotta Frittata on Friday for dinner. I will make the kielbasa & cabbage skillet in 2 weeks when we celebrate National Cabbage Day. Here are a few picture highlights of our food last week.

I almost didn't write this post for this week since it's a week of celebration and very little cooking for me (yay!) But I decided to share some of our traditions for this week that we follow each year. This week is always crazy for us with both Daniel and Zak having birthdays, plus the Super Bowl and usually Valentine's Day parties in school. This year I get a bit of a break since we only have have 1 Valentine's party (Zak) and it's virtual. But we still have a lot of celebrating to do this week and are looking forward to all of it!!

Water Flavor - Orange Mint again this week. It was really good last week! I'll have to remember to buy mint from time to time as I continue to use up my oranges.

Baking - I'm not doing a ton of baking, but we are having a ton of sweet treats this week! Some I'm buying because we like them and honestly this week is busy enough I don't need any more on my plate. From the store, we are having Meijer cupcakes on Sunday to celebrate Daniel's birthday with his friend, Kroger cookies on Monday at Zak's birthday party, Meijer cookie cake on Tuesday to celebrate Zak's birthday and Meijer sheet cake on Saturday for Daniel's birthday party. I'll be making an Oreo ice cream cake on Wednesday to celebrate Daniel's birthday. It's a good thing we have so much sugar to keep us going this week!!

Keeping Up With...Food (Meal Plan 1/31 - 2/6)

We had another great week of food last week and stuck to our meal plan for the week. Everything was delicious and filling which are our two main goals right now. We had some easier meals and a few I didn't have to cook which was a nice break for me. Now if only I didn't have a million dishes to take care of every day! I've often heard that it's expensive to eat healthy. While I don't necessarily agree with that, I do think it's harder to eat healthy because of all the food prep and cooking you need to do. Plus so many of the things I use are hand wash only. I often feel like all I do is wash dishes, ha! Here are some pictures of the food we ate this week, on some of the many dishes I had to wash.
This week is super busy for us! I have a doctor and dentist appointment and need to work at the church a few nights. Plus we are kicking off our February birthday celebrations on Saturday and will celebrate for the next week or so. There is a lot of extra prep for that. I'm also trying a different strategy this month with meal planning. I planned the whole month this past weekend, made the shopping list and am attempting to do all of the shopping this week. I'm hoping this saves me both time and money, we will see. I also really tried to focus on what we have around the house instead of buying a ton of stuff, but we also have a lot of special days to start this month so there was some extra shopping.

Saturday - Dinner at my brother's house to celebrate the February birthdays (2 of my boys & my niece)

Water Flavor - Orange Mint. I bought some mint to spice up my water for the next two weeks. I am enjoying the orange water, but it's been a lot over the past month or so. But I'm getting the oranges for free and I don't have any other way to use them so I'm happy not to waste them.

Baking - I'm mostly taking a break from baking this week because I would like us to eat everything we already have this week. Next week we have birthday celebrations most days since Zak's birthday is Monday and Daniel's is Wednesday. I will be doing a ton of baking next week for sure! The only thing I'm baking this week is Nutella Cookies to celebrate Nutella Day on Friday.
